When, Why & How Do You Decant Wines?

Decanting simply serves a couple of purposes; firstly to separate the wine from any sediment that may have formed in the bottle. Secondly to aerate the wine so that its aromas and flavours will be more vibrant upon serving the wine to your guests.

Many older red wines and vintage port style wines naturally produce sediment as they age; plus the colour pigments and tannins bond together and fall out of solution. Most white wines rarely do this. Stirring up the sediment when pouring will cloud a wine’s appearance and can impart bitter flavours and a gritty texture. It’s not harmful, but definitely less enjoyable.

By decanting you are simply separating this sediment from the clear wine. It’s fairly safe to assume that a red wine will have accumulated sediment after five to ten years in the bottle, even if this can’t be verified visually, it should be decanted. Here’s how to do safely:
  1. Set the bottle upright for 24 hours or more before drinking, so the sediment can slide to the bottom of the bottle, making it easier to separate.
  2. Remove the capsule and cork; wipe the bottle neck clean.
  3. Pour the wine into the decanter of your choice slowly and steadily, without stopping; when you get to the bottom half of the bottle, pour even more slowly.
  4. Stop as soon as you see the sediment reaching the top of the bottle.
  5. Once all the above has been done; you are now ready to serve the wine. 

Discard any remaining amount of sediment-filled liquid in the bottle.

NOTE: When decanting older or particularly fragile older wines; especially those 15 years old or more, you must take extra precaution and should only be decanted 30 minutes before drinking. Those younger, more vigorous, full-bodied red wines even whites, can be decanted an hour or more before serving.
